
Edamame, they say, is good for us but we just like the taste, texture and that it’s edible when hot, warm, cool or cold. Here’s a cool recipe.
Approximately 250 calories per person – Serves 2
- Prep time: about 5 to 7 minutes
- Cook time: about 10 to 15 minutes
- Total time: about 15 to 22 minutes
Ingredients
- 1 cup (150 grams) frozen, shelled Edamame
- Lemon juice from ½ lemon
- Lemon zest from one lemon
- 1 tablespoon (Tbsp) olive oil
- ½ teaspoon (tsp) salt
- ½ teaspoon (tsp) pepper
- 1 ounce (30 grams) Pecorino Romano
- ¾ cup of loose fresh mint leaves
Steps
- Preparation
- Fill a pot with enough water to cover the edamame.
- Add a pinch of salt and place the water over high heat (induction 320).
- Juice half the lemon into a small bowl.
- Zest the entire lemon into the same bowl.
- Shave the Pecorino Romano and place in a different small bowl.
- Roughly chop the mint and place in another small bowl.
- Cooking
- When the water is at a rolling boil, put the frozen edamame into the pot and lower to a simmer.
- Once the edamame is heated through (4 to 5 minutes) drain into a colander.
- Transfer edamame to a bow
- Final Steps
- Pour olive oil onto the edamame
- Zest an entire lemon into the bowl

- Squeeze the juice from ½ lemon on top of the edamame.

- Add salt and pepper to taste.
- Whisk all together.
- Place the edamame in the refrigerator to cool for a while
- Serve
- When nicely cooled, but not chilled, place the edamame in a serving bowl.
- Fold in the shaved cheese.
- Sprinkle the mint leaves over all.
- Toss and mix well.
