
We’re not keen on putting down roots, but these beets give us a taste of home.

- Prep time: about 5 to 8 minutes
- Cook time: about 35 to 40 minutes
- Total time: about 50 minutes
Ingredients
- 4 raw beets (estimated weight is around 17 ½ ounces or 500 grams after tops have been removed, but before peeling) (220)
- Thyme Mixture
- 2 teaspoons (tsp) olive oil (240
- ⅜ teaspoon (tsp) fresh thyme leaves, minced
- 1 teaspoon (tsp) salt
- ¼ teaspoon (tsp) black pepper
- Orange Mixture
- ¾ tablespoons (Tbsp) sherry vinegar (0)
- One large orange
- 2 tablespoons (Tbsp) of fresh squeezed orange juice (15)
- Zest of one orange
- Orange slices from half the orange
Steps
- Preparation
- Preheat oven to 400 degrees.
- In a small bowl, make the thyme mixture of olive oil, thyme leaves, salt and pepper.
- Orange
- Cut the orange in half.
- Juice ½ the orange and place in another small bowl.
- Zest both halves of the orange and add to the orange juice mixture.
- With the remaining half, peal then slice the orange as thinly possible and toss slices into the mixture.
- Add sherry vinegar to the orange juice.
- Beets
- Remove tops and roots and peel each beet with a vegetable peeler.

- Cut the beets in 1 ½ inch chunks. (Small beets should be halved, medium beets quartered, and large beets cut into eighths.)

- Place the cut beets on a baking sheet and toss with the olive oil and spice mixture.

- Cooking
- Roast at 400 degrees for 35 to 40 minutes, turning once or twice with a spatula, until the beets are tender.
- Remove from the oven.
- Toss with the orange mixture.
- Serve
- Sprinkle with salt and pepper and serve warm in a bowl
